  Simple but elegant logo that looks like it might date from the early 1800s. It should be a single color and work equally well in black ink, embroidery, etc. See example of the embroidered hat we used last season, but note that this logo does NOT necessarily have to incorporate the wording, “Essex on Lake Champlain”. A mountain/lake themed crest or nautical burgee might offer a starting point. Other visual ideas to explore: SX in period font, traditional anchor, Adirondack Mountains, Lake Champlain, Essex-Charlotte ferry, rising/setting sun motif (see Historic Essex),

Essex, NY is unique as a destination because it combines architectural and historic heritage (the town was founded and almost totally built in the first half of the 1800s and remains extremely well preserved) with rich lifestyle opportunities afforded by the Adirondack Mountains and Lake Champlain which is the biggest lake in the United States after the Great Lakes.

  Although none of these suggestions are intended as literal models for the logo, they are provided to help narrow the direction I'd like to go. I will also upload a quick (and unquestionably poor) mockup of one brainstorm that came to me. I know you'll do much better!

I'm adding another quick and SLOPPY idea incorporating the Essex sunburst motif in case this is helpful. Although I'm wary of pushing you all in too literal an interpretation... Sorry!

An even simpler, bolder idea, though it probably needs to include "on Lake Champlain" somewhere, somehow. Ideas?

Here's more food for thought. The idea of breaking the "Essex on Lake Champlain" apart from the logo might be simpler and cleaner. And using the date the town was settled, 1765, as a design element could be interesting and echos the historic/vintage element.
